Its finely cut, tightly curled, rich green leaves are used to both flavor and garnish dishes. It’s a favorite for flavoring potatoes, eggs and other vegetables. The leaves can be harvested until temperatures drop into the low 20’s–and they can also be dried. The leaves are high in vitamins A and C, potassium, iron, copper and manganese.
